Weekend Recipe Replay: Fiesta Taco Pizza

Every weekend, I like to keep it simple since most of the time is spent working on blogs and websites and studying for Anatomy II. This was a creation I came up with when I was becoming increasingly bored with basic tacos and bean burrito’s.

This is the type of recipe that you go with the flow. However, I will let you know the ingredients you will need to basic yet, very savory recipe.

1 can of refried beans

1 lb of lean meat

Cheese sauce or shredded cheddar

Taco seasoning

1/2 cup water

Crushed red pepperr and chili powder for kick

Large Tortilla shells (5 qty)

Red Mexican Sauce or Salsa

Method

  • Take one tortilla and spoon a heap of beans and cheese and spread it evenly.
  • Place a tortilla on top and layer cheese and beef.
  • Place another tortilla on top and spoon onions, tomato, or jalapeno depending on preference.
  • Layer another tortilla and place beans, beef, and cheese evenly.
  • Repeat steps until all ingredients are gone.
  • Put a top layer tortilla and pour red sauce, salsa, herbs, and spices.
  • Bake at 400 for 20 minutes.

Serves up to 6 people.

The basic structure of this recipe is take the beans, cheese, and beef and layer them in succession. You can mix up the layers but, I do suggest putting a layer of cheese on each level. I also tend to throw in a couple jalapenos, carmalized red onion, and fresh roma tomato in between the layers when I’m feeling unorthodox.
